Hartmann’s Old World Sausage

Project Title: Hartmann’s Old World Sausage Expansion

Organization: Ontario County Office of Economic Development

Project Location: Canandaigua, Ontario County

Project Description: In 2008, Hartmann’s Old World Sausage, a high-quality specialty sausage maker whose products are sold locally at Wegmans Food Markets and through the company’s website, hartmannssausage.com, was outgrowing its facility and searching for a larger space for production.

Project Need: Hartmann’s found its ideal location at the former Meridian Automotive Systems plant on Brickyard Road in Canandaigua. The new space was comprised of 21,000 square feet—nearly seven times larger than the company’s former location. The new location would also place Hartmann’s in close proximity to the renowned and ever-growing food and wine cluster in the Finger Lakes region.

The actual move, however, required extensive renovation and additional equipment purchases, so Hartmann’s requested financial assistance to make the project possible.

Project Solution: The Ontario County Board of Supervisors, through the Office of Economic Development, approved a $250,000 loan to Hartmann’s from the county’s Revolving Loan Fund. The financial package leveraged a $1.05 million investment from the company to renovate the new Brickyard Road facility and purchase new equipment, including equipment upgrades for a climate-controlled, natural hardwood smokehouse that will allow the company to create specialty hams and salami year-round.

Since the move, Hartmann’s has more than doubled its production and has created half of the 30 new jobs that are expected to be created through the project over a three-year period.
